Classical V
Five courses with saffron, yarcha and durbar-square nostalgia; changes courses not moods.
Rs. 5,800
Five courses, four sittings nightly
Sixteen tables, a listed cellar and a kitchen that changes one course weekly. Meat, vegetarian and dessert arrive as numbered plates; wine pairing costs extra but gets argued for once.

How the evening runs
You're seated with the cellar page — a paperback list, not a codex.
One weekly course explained in ninety seconds, allergy questions settled there.
Plates arrive with numerals; if you ask about the recipe, the chef leans out of the pass.
Dessert wine option, then the till receipt sealed with the table's number stamp.
The guestbook
“Chef changed one course because we mentioned Goa in passing. The dessert arrived Goan. Incredible.”
“Sixteen tables means the conversation stays yours. We closed a deal and a Gundruk consommé.”
“I asked for the recipe of course III and got a story and half a measurement. Fair.”
